When life gives you lemons…. What to do?? Make this slice, of course! My parents have a little lemon tree, it lives on their lawn. For such a small tree, it produces a great amount of big, fat lemons. When I was last there, they asked did I want some? “Ummm, yes! Please!” So, among other things, I made this slice- I was thinking along the lines of bliss balls, but was too busy (lazy 😉 ) to roll it into balls. The joy of this slice is that it’s nut free- perfect for school lunch boxes and folk with nut allergies. Do try this one, it’s yummy, tangy and deliciously easy….
Juice and zest of 2 lemons (I got 1/3 cup of juice from mine)
170 gm (2 cups) coconut (desiccated, shredded, flaked- whatever you have)
150 gm (about 8) Medjool dates, pitted
2 tbs chia seeds
